I'm 5'8 180 pounds, 42 chest, would a medium fit

I'd say yes Im 5'7" and 140 and small fits me well with a little extra room

What is the back length from the collar to the bottom of the jacket in the medium or large size?

27" from bottom of collar to bottom of jacket X-tra large. Go one size up, sleeves are perfect length for handlebar reach. I'm very satisfied with this purchase. Quality leather with pads in the right places.
