Does this come with the extra bar with the four different shapes to attach to make cookies? Or do I have to buy that separately?

No. I ordered the cookie shape making bar separate. I ordered this because it reminded me of my German grandmother’s cookies I use to help her make. I’m going to try to make the cookies with my granddaughters this year. 🤞Hope they come out like hers.

Can it make long strips of biscotti dough forrolling?

I have not used this yet. At the same time, I also bought a manual German style cookie press. If you want that info I can send it to you. I make a cookie (almond paste based) that is long and once baked you dip in dark chocolate and roll with pistachios. The German style one worked great. I have purchased and tried 2 electric cookie cutters. The electric ones cannot push the cookie out and instead the internal mechanism of the gun gets stripped out and won’t work.

I did not see any instruction for the cookie bar? Does the meat mincer and the blazes stay in the machine when attaching the Cookie bar.

This is poorly designed. The cookie bar slides in but moves. You have to hold in place to use
