Can this replace Yamaha's FC7 foot pedal (expression)?

I am using this with my MODX in place of the FC7. You need to be sure to set the pedal mode to "other" and zero the trim pot. It works but it has a logarithmic response rather than linear. For me this is not a dealbreaker, I just got used to it and celebrated saving a few bob.

Can I use this pedal as a direct replacement for a Roland EV5? (into expression pedal input in back of a guitar amp)

Yes - I had an ev5 that I used for an expression pedal for my keyboard - a good direct replacement at a great price

Could i use this with rolands gaia ? i couldn’t find this keyboards polarity anywhere

Roland recommend using their EV-5 pedal, which is more expensive, of course. My instinct is they all work. I’m using the M-Audio one with a Roland keyboard and it’s fine, just plug it in and off it goes. I can’t answer for your specific piece of kit, though. Sorry!

Does this also function as a sustain pedal?

Depends on your keyboard. If yours has a jack plug connection that is programmable rather than being dedicated volume control only socket then yes, provided 'sustain' -or damper as it is sometimes called, is one of the programs' options on your machine. Having said that, a proper sustain pedal has a sprung return action and is operated by the front of the foot whereas this pedal has a central pivot action which does not have a return spring type action but a rocker/pivot action operated with the foot fully on the pedal. It's not designed as a sustain pedal so even if you have a facility to program it for this purpose it wouldn't really feel right used in this way.
