What would be better dry lube or wet lube from this brand?

In short one is not better than the other I use both... when I've asked which is better? I have been told that the dry lube is for riding in dry conditions is less "sticky" and so picks up less dirt.... but tends to "wash" off in the rain...(?) The wet lube "sticks" better in the wet and not wash off but tends to pick up dust in dry dusty conditions... So I use both and when I clean and re-lube the one I pick depends on the weather at the time! But I have not noticed much difference between them, my bikes are my only transport so mileage vary's from zero to a hundred plus from one week to the next week and I don't keep track, I clean and service as necessary and time allows.

Has anyone tried using this particular brand of dry lube to maintain/clean lock knives?

No, but what an interesting thought. I will give it a try; after all, it is a lubricant.

Is this lube OK for ebike chain

Yes it's fine for ebikes. The shop where I bought my bike recommend it. I only use it in the summer when it is dry. It does wash off in heavy rain. I would not recommend it for winter riding in wet conditions.
