This is my favorite dry soup mix and I add cooked ground beef or cooked Italian sausage when I make it. My family loves it. I made 16 cups of this soup today for a group and added extra vegetables to it. It made such a hearty and tasty lunch with some garlic bread. Very easy to prepare and seasoned to perfection. I added some extras but you don't have to. It is a good way to use up the extras leftover bags of frozen veggies in your freezer or garden.

This is a great mix for a soup. It has a good amount of sodium, which is good, as sodium is an important electrolyte. Extremely easy to make in very little time. I personally add some beans, boiled potatoes, and shrimp to this mix, and it comes out amazing! The only thing I don't like is how big the carrot slices are. They should be cut into much smaller pieces. Amazon also has this for a price that can't be beat! UPDATE: I also bought the potato soup, and it has been giving me some nasty cramps. This soup has a whole bunch of artificial crap. I wish I could write separate reviews.

Don't want to start from scratch with your soups? This Minestrone mix is perfect. By itself it is tasty even if a bit salty for my preferences. But when you start throwing in your own vegetables, it shines! No more over-salty rehydrated flavors. Instead, your mouth will say " give me more!" Even better, this soup base works whether you are feeding a crowd or just yourself. Try adding a couple of extra fresh carrots or chopped potatos and leftover meat, as well as some onion and garlic (and perhaps some red wine). Just this little extra will change the soup from "yet another storebought variety" to "dish me up a second bowl." Get more adventerous and add broccoli or green beans or even eggplant! Make it one night and the next add fresh tomatoes (that may be looking sad because you forgot to add them to your salad) and more oniion and garlic to turn it into a rich tomato soup. Add tomato paste with red wine, onion and garlic to create a tasty and interesting sauce for noodles. As you can see - using your imagination and a few extra vegetables on hand - turns this basic soup mix into something special. In other words - a great shortcut or a versatile option to creating ever-changing options for leftovers.
