Is this a knockoff from china?

No, this is authentically sourced from Herm Sprenger in Germany. You can verify the engraved logo on the swivel, ClicLock buckle, and center ring to confirm authenticity.

Is the buckle clasp stainless steel? It's not stamped with anything indicating it is.

Yes, it is stainless steel as well

Clasp cover falls off when collar is open. Is this supposed to happen?

No The outer plastic clasp is only suppose to slide back and forth to either cover or expose the release Mine fell off once, but it’s easy to clip it back on. It’s plastic and flexible, so you can flick it off it at times. It should not come off regularly or fall off easily.

Do collars come with 2.5mm links or is 2.25/2.50mm the only choice to get 2.50mm?

I believe it should all say 2.25, I don’t think it comes in 2.50, so may be a typo. I looked on the herm sprenger site and did not see anything with 2.50. Hope this helps
