Yes they open. Have a glass stopper that's extends into bottle. So far they seem fairly well made. Have knocked them over several times and so far they have not broken.

Q: Can you put spices or olive oil in them to use for food?

Sure. I’d wash them first. But I don’t see why not. They are glass. I love mine!! Super company!!

Q: How well would theae work for holding ink for my fountain pens ?

If it any alchohol in the ink it may not keep them long. Maybe put a bit of rubbing alchohol in,mark the level and put the stopper in. Then check in a few days.

Q: How many ounces of liquid can each bottle hold?

The bigger ones maybe an ounce. I had 2 break in shipping and split the 3oz bottle into the remaining 4 bottles.
