Can an extension cable be used for the rear camera so it can be used for the rear of the car?

Not possible. It comes with a very short cable

How can the system work on parking mode if its only supposed to go on when the engine is on and running??

unfortunately it only works when the engine is on. When i bought it i thought it has battery and could work when the car is unattended, but i was disappointed.

Does both cameras go to the front of one on the windscreen and one in the back window? (Boot)

They both go on the front. One facing out the windscreen and one facing the driver.
