Excellent, strong, the good stuff
This is the real stuff: extract of Ceylon Bark. It has a sharp bite, just like you'd expect. Remember when you were young and you bought cinnamon toothpicks from that kid who pulled them from a small glass jar where they had been packed in cinnamon oil? Those toothpicks that burned the skin off your tongue for a thrill? They were soaked in cinnamon oil like this.Don't be tempted by cheap imitations like cassia oil; that's not real cinnamon oil. You'll be disappointed if you go that direction, I promise. (I speak from angry, ripped-off experience.) Not only is that stuff weak, the taste is wrong. Stay far away from cassia oil or "Cinnamomum cassia" or whatever else they're trying to pass off to fool you into thinking you're getting the real cinnamon extract you're expecting. I'm looking at you, Watson. Stay with Cook's Ceylon Bark extract and you should be fine and satisfied.

The powder cinnamon wouldn’t dissolve in my drink so I tried a liquid cinnamon. Don’t taste as good but I’m getting use to it.

This review is for the CINNAMON product, because for some reason reviews are scattered through here for every other extract produced by Cook's. Excellent cinnamon flavor - actually tastes like cinnamon (versus he numerous Ceylon cinnamon "supplements," which essentially taste like sweetened water, with no flavor or smell). Ceylon cinnamon (Cinnamomum verum) also contains much less coumarin than Casia cinnamon (Cinnamomum cassia), so is safer for those with a compromised liver or those taking statin drugs. With either variety, a little goes a long way so moderation is the key. Recommended.

weak and tasteless
I used this to make hard candy..I recently picked up this habit of making my own candy because I'm cheap..My only comparison is to the brand that is sold by the dram..My recipe calls for 2.5tsp, normally when you add any extract to 310+ degree sugar is burns off VERY quickly and leaves my forehead very RED for a bit..When I used this it was a very tiny burn off and then nothing.. So I have my candy and it's FAINTLY cinnamon not the smack you in the mouth that I was after..This is VERY weak , I used enough that it should be strong however it's not..

Huge bottle, amazing cinnamon flavor
I was honestly surprised by how big this bottle is! Should last me a long time, probably longer than I’ll need, but that’s not a bad thing. The cinnamon flavor is really strong and authentic, much better than the usual stuff I’ve used before.I’ve been using it in baking and for making candy, and it gives such a nice punch of flavor. The price was great for how much you get, and it’s all natural which is a nice bonus. Definitely happy with this purchase and will keep using it in a bunch of recipes.

Not spicy enough
I was disappointed with this. My recipe called for 1 teaspoon but I like it more spicy so I doubled to 2 teaspoons. Still barely tasted the cinnamon
