I don't know for certain, but when I did a web search of their customer care number, the site that came up was in Chinese.

Are the capsules no longer available?

I have not been able to find the capsules anymore on the site, either. I ordered the tablets, which can be swallowed whole, if you prefer not to chew them up. Still a great product!

Product description shows a chewable, but customer photos show a capsule?

The last order I received was for the dissolving B12 tablets. I believe the photo in the description needs to be switched out.

What is the typical shelf life of the capsules?

The vitamins come in a tightly sealed resealable package that contain 180 capsules. I take one a day so that lasts me six months. I don't expose all of them to the air, just take out enough for about a month and reseal. They stay fresh for that time period. I don't think Amazon offers the capsules any longer but now offer B12 Sublingual.
