Are the bottoms of the weights smooth and flat? I was going to use as a muller

They are flat and smooth on the bottom.

How much does each individual weight weigh?

Not exactly sure.but work great

Any tricks for picking it up when it's submerged in water ? It's too slippery to use tongs and I'd rather not dip my fingers in the brine.

Get a canning kit. They include large tongs and other useful canning items that can pull the weight out or a slotted soup spoon that fits in the jar opening.

These can't be boiled for sanitation?

I usually put mine in the dishwasher. I don’t know if you can boil.
