How much do you use for 2 gallons of milk that normally uses a packet?

Depending on the cheese you are making it varies from 1/4 tsp. - 1/2 tsp. Please note that tablet rennet is not included in this as this is true culture. You will need to add rennet. It remains stable, however, once opened it should be stored in a freezer.

How long to culture for creme fraiche before adding rennet?

Hi, I don’t actually use this or rennet in my Creme fraiche. I use cultured buttermilk but if you want to use this, it would take about 1/4 tsp. per 2 cups heavy cream. Warm milk in a water bath to 70 degrees F, add culture or cultured buttermilk. Let sit room temp for 24 hours, stir gently and refrigerate. I actually make it in a quart mason jar so I can just store it in that as well. I cover the top of the jar with a coffee filter and band while making then fully cap when done. Best, Paula

Good company and great products, after they sent the original order they realized its going to expire soon, they sent me another one free whiteout me asking. Thats great practice by company we are rarely see these day.
