I think you would need to have them in the Apple smart case as well as this one to go into sleep mode.

No, but the smart case fits in OK.

haven't tested to submerge it anywhere but they held pretty nicely agaisnt some light rain

Would these work with any other headphones?

Since it's just a hard case it should fit almost all other headsets. I tried with some old ANKER headphones I had (pretty thick) and they fit just fine
