So far I really like this knife. It’s very sharp and flexible

The blade is thin and flexible making it easy to skin a fish (see photo). The blade feels sharp but I think it could be sharper and the sharpening is not consistent almost like it was done by hand, very noticeable near the tip. Other than that a great value and works well. The sleeve is also great.

I bought this specifically to remove the skin from a salmon filet. It works like a charm. It's so much easier to do with a flexible blade!

Very satisfied with the product. On-time delivery, as well. I ordered the flexible model. I probably should have ordered the standard model, as the flexible one is a bit too flexible for my application (hog fish fillets). That being said, it's an excellent product and good value for the price.

Looked up Chef reviews and out of high end filet knives this was the top pick over knives in the hundreds. Cleaned 75 catfish and it's still sharp. Can't go wrong for the price... 5 stars twice in my opinion
