Spice is not enough
I was hoping this would make a spicey pepperoni but my whole family is disappointed with the level. We will reduce the meat by 25% and see how that goes. The Baking directions just give you cooked meat, not pepperoni. You will need to use a smoker or dehydrating setup to get a curred product. Even at a 165-degree slow cook, it came out like cooked meat. The temp will have to be lower to get a good cured pepperoni stick. I haven't quite mastered the art of curing so I imagine an experienced person will get better results. We will try a 95-degree jerky cure next time.

Pay attention to fat content of the meat you're using!
We love this mix and have made dozens of batches over the past few years. I usually start out with 95% lean ground bison (Costco) and add maybe 1/4 # of sweet italian sausage to bring the fat content up a little. (If the meat is too lean, the salami can be dry.)To the spices, I add 1 tsp mustard seeds for 'crunch' and some sliced green olives. Best served right from the oven!

Don't let this one pass you by as it is a very good spice pack. I used my grinder and processed some beef and pork and then followed the directions. It was some of the best that we have ever eaten. It stores well and retains great flavor. If you like to make your own sausage and don't want all the extra fuss then give this brand a try. The price and the results are fantastic. You won't be dissatisfied.

Beats all the rest!
I have made jerky with Grandma Lamaure's jerky seasoning for almost twenty years. I have tried many brands and none can compare to this product for flavor and ease of use with either beef or venison. I make my jerky in the oven at 220 degrees with the oven door cracked open with a kitchen serving spoon for 2 1/2 to 3 hours; that allows the moisture to escape. I have never had a bad batch and my friends expect me to share all the time.JW

This is the easiest and best salami mix I have ever used. Add string cheese, olives, jalapenos, etc. to customize your taste.

Works well.. do not go over 2#
These packs are great for 2 # of venison.some time the packages of venison are not 1# each so be diligent about just 2#and this will work great.

Love this product
Have not yet made this pepperoni one yet but I am giving it 5 stars regardless. The summer sausage and the salami rolls were outstanding and I expect the same from the pepperoni! Love this product! So far all the flavors are excellent!
