Kosher Parmigiano Reggiano - Parmesan Cheese By Bertinelli A certified production chain allows us to produce a DOP Parmigiano-Reggiano, the extraordinary quality. Every day, 365 days a year, they produce 20 wheels of Parmigiano-Reggiano. A unique product, the result of careful attention to every step, a valuable outcome of the fields where the products are used, the nutritional requirements of cows present in the barn and the milk used is exclusively that of our cattle. For each kg of Parmigiano-Reggiano use 16 liters of fresh milk from Bertinelli barn which is on the hills of Parma, just a few kilometers from the dairy. A nutrient loads of protein, vitamins, phosphorus and calcium that focuses in the dough and in the long maturation period remains alive. Natural aging makes it easy digestion of Parmigiano-Reggiano and develops a complexity of aromas and extraordinary flavors. Bertinelli offers three different ages of Parmigiano-Reggiano: 15, 24 and 36 months. If you still feel in the first milk, in the second they perceive the hay, while the more seasoned you hear hints of leather.
