To make a pasta sauce, how do you make the tomatoe smaller so that they turn into a sauce

Accepted Answer

Some cooks crush the tomatoes in their hands. Others prefer to 'grind' them in a blender. If you do use a blender, do not fully 'blend'
the tomatoes ... 'pulse' grind the tomatoes. I use a good olive oil to coat my pan and warm it up before adding the tomatoes. Cooking 
time is 30 minutes or less and during the cooking, let evaporation reduce the volume of the sauce thus allowing it to thicken. Cooling 
without a cover on the pan will allow further thickening.
I usually sweat 2 or 3 cloves of sliced garlic in the olive oil under low heat (before adding tomatoes), and remove the garlic before it turns 
brown. Some elect to leave the garlic in the sauce; but, if you go this route, do not overly brown the garlic ... burnt garlic ruins the sauce. 
The most important thing to do is to add enough salt (I use sea salt) to the sauce. By the way, most Italians call it 'gravy,' not 'sauce.'
Fresh, chopped parsley is usually added as well. Beyond this, it is up to you to personalize and get creative: you could add add chili peppers 
or crushed red pepper to the olive oil ... you can also add freshly ground black pepper ... try oregano leaves (dried) or even a bay leaf. In Italy, 
some add a little dried sage, etc. ... some add freshly grated cheese ... I save the cheese for topping the pasta. And I know it may be sacrilidge 
to do so, but some add a pinch (or more) of sugar to counter the acidity of the tomatoes.
