Q: Could this be used with Ball jars and the vacuum attachment?

It is NOT compatible with product FoodSaver T03-0006-02P Regular-Mouth Jar Sealer. I am looking for one that is compatible with the port entry. Handheld sealer that comes with the sealer has a barb type tapered hose, the T03 product has a straight fitted hose, no taper or barb and will NOT engage.

Q: Does this machine let you stop the vacuum process whenever you want so it doesn't crush some foods?

It has 2 vacuum settings, dry and moist. The moist does not vacuum as much. However, you can stop the process at any time by hitting the "seal" button. Also, it has a hand held attachment which you can use with the ziplock-type bags and stop the process whenever you want. You can also use mason jars and put the food in them and use the jar accessory. Or the canister or deli container. You use the handheld attachment with those.

Q: Will this work with Mylar? If so, up to what weight?

I have NEVER had a successful seal with vacuum-sealable mylar bags, even the kind with the ridges for drawing the air out. I don't think the sealer gets hot enough. I have tried sealing each seam three times in a row, and I still have air get back into the bag. It works just fine for plastic sealable bags, but mine does NOT work well on vacuum-sealable mylar bags.

Q: Besides the price, what is the difference between the fm 2435-ecr model and thev 4440 ?

We offer manual and automatic FoodSavers. Both pull the same amount of vacuum force and have built-in cutter and roll storage. With automatics, you just insert the bag and it will seal or vac/seal without any extra steps. Whereas with manual FoodSavers, you must turn a latch to lock the lid down and then press whatever function you need. This model is a manual model, and the 4440 is an automatic.
