What type of metal are the trays made of?

The trays are plastic, not metal.

It does not have a timer... the only thing that this dehydrator does not have!

Is this loud or quiet? I had one before and the loudness drove me nuts to where I couldn't use it

It is incredibly quiet, you can stand next to it and whisper and still be heard (my wife and I were doing that talking about presents for the grandkids). Someone called it white noise, and that's a good description.

The owners manual states to use "precooked or processed" turkey when making turkey jerky to avoid harmful bacteria. Has anyone used raw turkey?

To add to the discussion, water activity and salt also controls bacteria growth, so its not just the temperature that is it is processed. As with dried cured country hams. They are ready to eat after being cured and are not heated to 165 to kill salmonella. So the 160 temperature should be fine.. Former USDA employee.
