How do you tell which end of cutting to plant in dirt?

I believe it goes cut ends up and solid bottoms down? It really doesn't matter it'll just take longer to come up. Probably set a better stalk too. If you're unsure you can root it in dechlorinated water and see which end sets root then set it in dirt. I've never had much trouble taking cuts, they're like succulents.
