Q: is this flexible enough to add as a trim to a dog coat? i want to add it around the trim of the coat and around corners

Yes, it's thin enough like a sheet of paper, but it does not stretch like bias tape, so you may have to miter your corners. If you are sewing it to something with stretch I noticed with my project after washing it did get a somewhat rippled effect to it which is due to it being a non-stretchy material and I expected something like this to happen. You may also want to not use pins to get it into place as once there is holes in the tape you will see them. I suggest using the small clips to hold the items in place until sewn down. I did adhere mine with topstitching only.

Q: Is this an iron-on or sew-on reflective tape?

This is a sew-on reflective tape. I like it better than iron-on because it stays in place better.

Q: Can I put fabric glue on the tape instead of sewing it?

This material should be stitched in. I doubt glue will hold-especially after washing. Furthermore, if you decide to pull the strip off, the stitches will come right out but the glue will have already ruined the fabric.
