Yes, different crystals change the color and character quotes. If yours are not changing them, they probably are not authentic or the holocron isn't authentic. I have the holocron from Galaxys Edge, each kyber does something different.

Q: Does this have Obi Wan message?

Only if you put the obi wan crystal in it

Q: Can it just light up and not have the voice/sound play?

No. Once turned on it lights up and an "energy" sound csn be heard. Voices do not activate unless you force it to.
