Butcher Block Conditioner technically could go over the resin to add additional shine, it won't be able to penetrate the resin and get to the wood below. So less product would be necessary.

How much coverage will i get out of one gallon?

A hole lot. I put 2 coats on a solid maple butcher block that is 24x24x18 with legs and a skirt and still have 3/4 of the gallon left. I covered all sides including the bottom. It goes a real long way...

Does this change the color of the wood?

No, but it does enhance it. It does not yellow or stain, but it will darken and enrich the natural color and create deepen contrast and grain.
