When using this product, how do you remove the air that I assume is already in the hose so that you don't inject air into your system?

The only way I know to remove any air in the hose is to loosely attach to the service port and open the valve of the fitting connected to the refrigerant source. You only need to open it for a second or so to purge air from the hose then you can finish tightening the hose to the service port.

What piece are we missing between this and the retrofit valve?

You should be able to directly connect the hose to your piercing valve and the other end would be connected to your can of refrigerant.

The quick coupler side does not fit on our Subaru

Don't know what year your Subaru is and I'm not a car mechanic but from what I understand the coupler should work if your system is R134 based. Some car makers may have systems which use a different freon type which might require a different fitting. Prior to R134 was R12 but that was for cars in the 60s, 70s and maybe 80s.

What should the meter reading be for a system fully charged with 134a?

Between 3 and 5 on the smaller unit of measure. These systems don't take very much.
