Mom wears audio headphones over her hearing aids to hear TV and CDs.  will this help her hear conversations and church? severely deaf

Great question - if the headphones she uses for the TV & CDs are not causing feedback (high-pitch squealing), then the headphones on the Pocketalker 2.0 should not either. The Pocketalker 2.0 is designed to amplify: 1) conversations near the microphone - an extendable microphone is included for when someone is sitting across a room or for the television and 2) the t-coil setting allows any person using a microphone in a looped room to have the microphone audio to go directly into the headphones. How does one hear in stereo?  The included plug-in microphone is monaural.  How does this translate to a stereo presentation of ambient sounds?

Apparently, Monaural is still the standard for use with audio induction loops such as hearing aids. I think that amplifying ambient sounds with stereo will make it difficult for the person, who is hard of hearing, listen to someone talk - which is the purpose of the Pocket Talker.
