With bananas, if I don't use these, then it takes about fifteen minutes of hard labor to peel the bananas off, and my fingers are sore for days after. If I do use these, then it only takes 15 seconds, and the bananas just slide off without breaking. I bought two of these packs, so now I have five total. The one that came with my drier, and then two each in both packs equals five. I also got two extension trays, so now I have six total trays for my drier, but only five of these screens. And, the Nesco standard trays aren't bad for bananas, at least compared to regular dehydrators. These special screens just make drying so much easier. Pros: +A must have for any drying of stuff that might get stuck +Great design +Works wonderfully +Doesn't block any air flow Cons: -You'll end up having an odd number of these screens for the even number of trays that come with the dehydrator

Does the job.
These allow you to dry just about any type of food you would like to dry without worrying that it might be so delicate or goopy as to fall through the screen of the trays. Some breads (for croutons) crumble and make crumbs. Some jams or jellies are too goopy to sit properly on a screen. These are easy to clean (though sometimes a quick soak is helpful) and simple to use. If you'll be drying food (and most folks who do that have an experimental nature), then why not spend a few extra bucks and go all the way? This way there will be no limits to your creativity. (I am thinking of drying some birthday cake . . . ha, ha. Why not? I am going hog wild with my food dryer, from all kinds of wet and mushy fruits, to dark bananas (wonderful flavor!), to very ripe pears, apples, etc. These trays let you do more delicate and wetter foods. Oatmeal, for example, for times when you're camping (yes, it is different to dry cooked and doctored oatmeal than it is to just eat dry oats out of a box -- maybe this is not for everyone; maybe not gourmet fare, but we're EXPERIMENTING here... so a fruit-roll-style breakfast of oatmeal with raisins and brown sugar and almonds is pretty okay...). Just an example of the fun you can have with these...
