You do not have full disclosure of all of the ingredients on your products. Why? You say no sugar. What do you sweetnen them with?

It's sweetened with glycerol, the second ingredient. That is why there is 21g of sugar alcohol instead of sugar. Sugar alcohols don't affect blood sugar as much as sucrose (delays release a tiny bit), but glycerol is the closest sugar alcohol, and in fact has more kcals/gram than sugar. Sugar alcohols don't fully break down, leading to bloating and diarrhea.

How do I read the ingredients for these bars?

Ingredients: Protein Blend (Soy Protein Isolate, Calcium Caseinate, Whey Protein Isolate, Whey Protein Concentrate), Vegetable Glycerin, Maltitol Syrup, Cashew Butter, Water, Sunflower Oil, Palm Kernel Oil, Freeze Dried Raspberries, Lecithin, Natural Flavor, Salt, Citric Acid, Monk Fruit Extract. CONTAINS: TREE NUTS (CASHEW), MILK, AND SOY.

what is the carb count on these?

The new package (for the lemon, which somehow linked me to this bar) is: 24g total, 13 sugar alcohol, 0g sugar, 0g fiber. I'm not sure but I'm pretty sure this means that it is 11g of net carbs and not as "Low GI" as it purports to be.

is there sugar in them?

The two leading sugar alcohols are Xylitol and Erythritol. The ingredients does not specify which. Both are excellent sugar substitutes; very low glycemic index (near zero). Xylitol actually has a mild anti biotic property that is used in some nose spray products. Erythritol emparts a cool tasting sweetness (cool as in low temp, not as in "really cool"). Both are great sweeteners.
