Will these fit a 5ml jar?

I really don't know. We measured the distance across the top of the jars we used and then ordered accordingly.

What size dpi need to seal 3.2 in diameter and 2.4?

It seals a 4oz twist top bottle

What size should I choose ,my measurements is right at 1 inch , do i need a 24 ml or 27 ml and i don't want it to be thick

I haven't used these in three years but I remember measuring the opening of the little jar I needed to seal and then buying that measurement and it worked. You have to be very careful when putting them on for the seal to work, but they worked great for me. Also, if the size isn't right, Amazon is wonderful about returns.

what size would i need for a gallon bottle?

I don’t know the answer, but if I needed it for a gallon container, I would contact the seller and ask them.
