How are the inches measured? The entire width or is the 12 inches measured minus the hinge Itself

11.5 inches without the hinge and with the hinge 13 inches.

What is the safe load for a pair of these hinges?

More than adquate for a wooden shed door.

Will they support glazed wooden doors on summer house

They are good solid hinges, and would support door but depending on door width and weight I may be inclined to fit three if possible .
