What do you need a ceramic stone for this oven ? If so which do you recommend

Charlotte you do not need a stone for this oven. Pizza cooks directly on the brick floor of the oven. In fact it gets so hot that most stones would crack. Note the dimensions of the oven, most stones wouldn't even fit inside.

any recommendations on how to get the stone to heat up to 500 degrees?

Build your fire in the middle, then move to the side when ready to cook. This will heat the stone floor.
