is this product stiff enough to stand on it's own? I want to use to protect siding while staining the deck. Set in place then tack with tape

Yes, i believe so; you can just tape it in the places you need to. Art Stores carry different thicknesses, thicker than this one, however they are usually in sheets and not rolled. When using for baking applications it stands up very well in the mold, that is why i think it will stand up well for you also.

Will this work on small cake squares? How to get sharp corners?

Yes it works for small cake square, but it can't do 90 degrees, it's more like a right angle of some radians.

Would this work for making fruit roll ups in the dehydrator?

Do you mean wrapping them in this after your fruit is dehydrated? These are used for molded cakes, mousses etc....
