Does this item have ajustable roller or does it open more I would like to see if it nit dough thanks

Not sure if you are serious about using this roller to "nit dough"? It is really only made for towels/chamois to squeeze out extra water. You can adjust the tension on the rollers; but, you need a wrench to adjusts. The top roller only turns because of the friction of the bottom roller as the towels/chamois is squeezed between them. You also need to pull the towel/chamois from the other end to help the process sometimes. All that would be difficult it you are trying to "nit dough" with this wringer. It would be an extremely expensive dough roller that wouldn't work very well.

what is maximum height you can set it to?

Four feet or so. Waist high. It's perfect for me.

what is the roller width?

Unfortunately, I'm not at home to take an exact measurement however the rollers are appropriately 15" in width. I was skeptical about spending almost $300 on something to wring out a chamois but this device works great! The frame where the rollers are mounted is cast iron (painted) and is extremely robust. The legs are adjustable and fold up for storage (I store mine in the garage on two sturdy wall hooks). I'm not sure how long it would survive in a commercial environment but for home use it's excellent.
