Benchmarked against four brands โ CORTAS still sets the reference standard for pomegranate molasses
I want to be upfront about my baseline here: I grew up eating Lebanese food and have been cooking Middle Eastern recipes seriously for about eight years. Pomegranate molasses is not a specialty ingredient I use occasionally โ it goes into my fattoush dressing every week, into muhammara, into glazes for lamb and duck, and occasionally straight onto labneh with walnuts when I want something that takes thirty seconds to prepare and tastes like it didn't. So when I say I've tested this product methodically against competitors, that's coming from a place of genuine culinary investment, not casual curiosity. I ran a side-by-side tasting of four brands: CORTAS, Al Wadi, Sadaf, and a small-batch artisan option from a specialty grocer. Evaluation criteria: tartness-to-sweetness balance, depth of pomegranate flavor, consistency and pourable viscosity, and performance when reduced further in cooking. CORTAS came out on top on three of those four metrics and tied on the fourth. The flavor profile is what separates it. Many pomegranate molasses products lean heavily sweet โ essentially a pomegranate-flavored syrup with the tartness dialed back to be more broadly palatable. CORTAS holds a genuine tension between sweet and sour that is closer to actual reduced pomegranate juice than most competitors. The citric acid addition is calibrated correctly โ it amplifies the natural tartness without tipping into artificial sourness. When I used it in fattoush dressing against the Al Wadi version, tasters picked CORTAS as more complex and less one-dimensional without knowing which was which. Viscosity is worth discussing because it affects how you use it. CORTAS pours cleanly at room temperature โ thick enough to coat a spoon and cling to ingredients in a dressing, but not so thick it needs to be coaxed out of the bottle or warmed up. The Sadaf version by comparison was noticeably thicker and harder to incorporate into cold applications. For cooking applications โ glazing, reducing, incorporating into sauces โ the CORTAS consistency heats and reduces predictably without scorching at lower temperatures. The 10 oz bottle is the right entry size if you're new to the ingredient. Pomegranate molasses has excellent shelf life once opened when refrigerated, so don't let the bottle size deter you from buying it even if you're not sure how frequently you'll use it. I go through roughly one bottle every six to eight weeks cooking at the volume I do.

Not too sweet, unique flavor
I recently purchased Cortas Pomegranate Molasses, after discovering it in Melez Berg's Dinner Tonight cookbook. This product has quickly become a staple in my kitchen. I expected that it would be sweet, but I was pleasantly surprised to find that it is not overly sweet, which I appreciate. It adds a unique, tangy flavor to both savory and sweet dishes, making it incredibly versatile. I am looking forward to trying out new recipes and new flavors. Yum!

This is the real deal
I searched for and was disappointed in other products labeled pomegranate molasses until I found a website where this one was touted. This is the real deal from Lebanon. It's thicker than syrup and true to it's description of molasses. The taste is a burst of piquancy and tartness and sweetness in a combination that puts an arugula, sliced pear and goat cheese salad over the top. A little drizzled on anything goes a long way. The packaging of the glass bottle was so secure that it guaranteed an unblemished product. A unique taste that is addictive and healthy. The main ingredient is pomegranate and the other ingredient is a natural sweetener so it's not low calorie per serving but considering the scant amount you need it is well worth both the calorie count and the price of the bottle.

Delicious and versatile
Pomegranate molasses is a thick, tangy-sweet syrup. It is versatile as you can use it as a fruitier alternative to balsamic glaze for chicken, lamb or roast vegetables. Try creating vibrant salad dressiings, or marinades for chicken or lamb, or drizzle it over hummus or soft cheese. I also use it to flavor carbonated water for a refreshing and healthy alternative to pop.
