The Bison grill is designed to be versatile and last a lifetime. The Grill is setup to use a Rotisserie and yes that allow air into the firebox. It is however possible to have lower temperatures and preform indirect cooking for a period of time but in order to do this it is important to start with an amount of Coal equal to the temperature you are trying to create. You can sear a steak on a Bison Grill or Slow cook a whole chicken or Roast but we suggest that you start with the slow cooking menu item then move to the searing by adding coals to reach that temp. Typically the slower cooking requires more time so this typically works out for meal preparation for your family and friends.

A really nice of equipment that will not wear out soon
I did not give this grill five stars because it could be made more user friendly easily and with little or no additional expense to the manufacturer.I purchased this grill because I wanted a grill that would last indefinitely and I think this one will with reasonable care. There are some parts that will have to be replaced but for the most part the grill should be around longer than I will be.It arrived in two boxes the head in one that was mostly assembled and the cart in another that was easy to assemble, the only part of the assembly that required two people was to set the grill head on the cart, you should be careful handling the grill head there were some extremely sharp edges on the bottom that should have been dulled at the factory, I used a file to knock those edges down for the sake of safety.After assembly it was apparent that the grill was built to last and had most of the features I was looking for, of all the grills I looked at none had everything I wanted but this one had more than the others.The knob that raises and lowers the charcoal tray is inconvenient to grasp, I will find a way to replace it with a crank of some sort in the future, the knob is threaded with a lock-nut so it shouldn’t be too difficult to change it out.The only other issue I had as far as function was the grate that holds the charcoal comes in three sections that the dividers sit on, the spacing of the bars on the grates is intended for the use of charcoal briquettes so if you use lump charcoal the smaller particles would drop through and be wasted, a lot of grills are made like this.I cut a piece of expanded metal to cover the entire charcoal tray and three pieces to weld to the bottom of each divider, this will allow the efficient use of lump charcoal, I would have liked to use stainless expanded metal mesh for this purpose but I was unable to find it in my area so I was stuck with using carbon steel until I can locate the stuff in stainless.I have used lump charcoal for about twenty years, it contains no adhesives, it burns hotter, it starts easily, it produces very little ash and the food tastes better.I would buy this grill again and I would recommend it to a friend, all and all it is a pretty fine piece of equipment.

Less is more
This is one of the more reasonable priced "high-end" stainless steel charcoal grills. At first glance, you may think that you might be missing out by not having two adjustable charcoal trays; no front pull out drip tray or a full width ash tray. I will now emphatically state, that such concerns are unwarranted.The height adjustable charcoal tray that holds the three segmented charcoal grates and frames, lends more versatility and simplicity than you could imagine. I made one modification that I think should have been incorporated by the manufacturer: I took the liberty to tack-weld the three charcoal grates to the three basket frames, and thus now have three separate charcoal baskets that can be moved around on the adjustable charcoal tray with impunity, and while in full cooking operation; that is a powerful feature to have.The grill box is fairly airtight with the vents closed on the front access door; the hood is less so, therefore, even though you can keep things smoky inside while cooking, this is not an ideal smoker. It is, first and foremost, a versatile grill.The simplicity of this grill, and the way the pieces breakdown, gives complete access to maintain the grill easily. The ashes can be removed with little mess or fuss through the bottom ash opening and the slide off ash box; a very slick operation.By virtue of all the previously mention features, and also considering the cooking grates are in four separate pieces and there is an overhead rack, you can rotisserie, direct and indirect cook simultaneously, with a little effort.The charcoal tray adjustment knob is very robust and stately looking and does its job very smoothly.This grill is expensive, but it should look good and do its job for years to come.I've studied long and hard on all these high-end stainless "designer" type grill. This is the one that makes the most sense to me across the board.When you are done cooking, open all the vents and let the charcoal burn out hot. This will benefit you two ways 1. It will quickly reduce all the charcoal to ash that you probably couldn't have extinguished anyway. 2. It will burn off most of the grease and food and can make clean-up much less effort.If you need a rotisserie for this grill, just buy the Bull grill motor mount only and use your old rotisserie or purchase one elsewhere. Cannot control air flow adequately - tech help useless
It is certainly adequately made with a few minor design problems: the ash box is inaccessible and requires you to get on your knees to put back in position, the bottom vent lever is almost unreachable. My largest concern is that after a hot fire for a sear I want to close the top and reduce the oxygen in order to cool the coals and have a moderately hot oven. I could not obtain this. With all air vents closed and top down the temperature held at 450 degrees. For a long time. This is too hot for much indirect cooking. I called Bull and spoke to two technical people. Neither, admittedly, had experience on coal grills and did not understand this basic issue. I gave up.

Built to last a lifetime
I've been looking at this product for many years but didn't want to spend this much money. In the mean time went through several cheap, flimsy Chinese made junk. Finally decided to splurge on this one. If you're looking for something that will last a lifetime look no further. I can tell you it's built like a tank with heavy gauge stainless steel and hardware. It ships in two boxes; you have the assemble the cart legs and casters but the grill itself is pre-assembled. Aligning some of the holes on the legs took a little work. Be careful not to cross-thread the riv-nuts - had to hold a couple with some needle nose vice-grips to keep them from spinning while tightening the leg bolts.Love the big knob that raises and lower the charcoal grate, the front door so you can add more charcoal and the ash box (not shown in the picture). Looking forward to many years of use.
