Would these work if one scrambled eggs and poured the mixture into these rings? How would one "flip" the mixture so that the eggs are fully cooked?

I scramble the eggs all the time. Just make sure the pan or griddle is hot and set the rings on the pan to heat up a bit before pouring in the eggs. Let the eggs get pretty well set up before removing the rings and flip carefully with a spatula. I made 18 eggs over the weekend for breakfast sandwiches for the freezer using an electric griddle and 8 egg rings. Had maybe 3 leak badly. Don't use too high of heat, I keep my griddle at about 225-250° F.

I bought the small ones 4 inches round - they have the large ones!!

How many eggs can fit in the ring?

one egg can fit in the ring if you put in two it will run out the edge and get out side the ring if the pan is not up to temperature when the first egg is put in. some times it will not cook right the temperature has tro be just right and it can be tricky to do twoo eggs in the ring.

is this product oven proof?

I did not try it in the oven. I was disappointed in the product and would not try it in the oven. It is soft and does not hold the shape. In using it in a skillet with eggs in the ring, they ooze out and make a mess. Unsatisfactory product.
