Q: what is "use by date" for this product?

It depends on where it's coming from and where you live . I don't buy it from Amazon , especially the large box that is , 1,000 ounces . I go to chinatown in my state . I get the same box for seven or less . If you have a chinatown in your state wherever you live im sure there is chinatown . Don't bother with amazon they are over charging way over . And the product date is always on the bottom of the box , my most recent one says , product date June 2020 best before June 2025 , that's a long time , for no spoilage , hope this helps

Q: How much should I use to make I gallon?

I use this to make iced tea and hot tea. I'll use a teaspoon full for a cup, usually 6 oz, I'll use 3 Tbsp for half a gallon, so I'd use 6 Tbsp or or about 3 oz measure for a gallon. I don't actually drink it over ice so mine is less strong than how others make it, so go with about 2/3 to 3/4 cup to make yours, adjusting to taste.

Q: What color is it suppose to be after steeping? I am getting a brown/amber color after steeping this tea for 3 minutes at 170 degree F.

Green Tea indicates the color of the unprepared tea. In rare cases the prepared tea is also green: the most notable example being Matcha green tea. Some would say use 140 degrees and two minutes for steeping. But it is really personal preference. I use 160 degrees and 15 minutes for steeping time.
