Q: Is there a way to interrupt the flow when filling a bunch of bottles?

Use a bottling wand. It’s a spring-loaded device that will only allow the siphon to flow when it’s pressed down into the bottle. Releasing it pauses the siphon from flowing.

Q: What is the length of the siphon? I need it to reach to the bottom of a 6-gal carboy.

The outside sleeve is 23", the stem is longer, and I use it on 7.5 gal carboys with no problem. You don't want to draw from the bottom.
