Q: is this hard to put together?

It's very easy. It's more difficult to re-stow it in its cover. The black inside makes it hard to see to get it back in.

Q: 2 Questions: Does it really fit 6 people and what is the weight of the table?

very tight for 6 - really a four. I bought it to set up 2 campstoves on a non burnable surface so I can cook for 12. weight ok to carry short distances. We canoe with it. Great for car camping or boating - not a backpacker. Is a little bulky compared to my smaller roll up table with legs that screw in, but seems pretty strong.

Q: Does it have different heights that you can set up to?

No. It only has one height when opened. However this is the most amazing table I have ever seen in that it folds up into a small carrying bag but can seat up to 6!

Q: I have lost 3 ...maybe 4...of the plastic end caps on the individual slats. Are those replaceable?

I haven't lost mine yet, but assume you can replace @ AMAZON or @ your local hardware store if you take it in there. That is what I would do.
