Are there any recommendations for an everyday cookbook that will help me learn how to use this better? I'd really like to use my Staub Cocotte more.

Just go on YouTube.  Start with the type of food you like and add (cast iron) to the beginning or end.  Plus you'll actually get to see the food being prepared and cooked.  Visual references can be very helpful for many different things including cooking.  Simple example would be a roux there are generally 3 types, and a visual reference is helpful if you've never made all 3. Plus cast iron is what you want when it comes to a roux. But that's one example out of many.  Im from Louisiana, so that's just what popped in my head first.  With winter here it's a good time for soup, stew, chili, gumbo, chicken and dumplings, and so on. With an enamel cast iron pot you can cook anything you want to.  With a regular non-enamel you can't.  Generally you want to stay away from acidic foods without having the enamel coating, for example, red sauce spaghetti. With the enamel coating you can make whatever you want.

Patented lid prevents evaporation of water, causes water to sprinkle onto the food (self-basting), and it is induction hob compatible meaning it will work on an induction cooktop.  It's interior gets better with use and develops a seasoning and becomes more and more non-stick.  Heavy weight enamel cast iron transfers and retains heat evenly.  Specially formulated black matte interior enamel contains traces of quartz, giving it additional heat resistance and a textured surface that results in better browning.  Cast iron is a compound of carbon-enriched iron. It also contains silicone, manganese, phosphorus and sulfur.  The handles are silicone and can be removed for temperatures higher than 200 degrees C which is 392 degrees F.
