Reasonably priced and a lifetime knife
My wife received a three pc set as a gift 40 years ago. These knifes stay sharp and are our go to everyday workhorse. We particularly like the FK-70. Our kids kept taking our knifes (and everything else) when they left the house. We were just replacing. Make sure you don’t use a knife sharpener. Just a few strokes on the bottom of a ceramic coffee cup is all you need. Japanese make the best knifes. Found KnifeMerchant on the net sells the FK-70 for $45.

strange knife
Update... after using it for awhile, it’s has become one of my go to knifes. Although the box says it’s hrc is in the 50s, the knife holds an edge very well.positive-- full tang, good fit and finish. pretty sharp out of box.negative-- although the description says fillet knife, its a chef knife without a belly or a point.strange-- the box the knife comes in shows 5 points of the knife with 5 different rockwell scale numbers. closer to the tip was around 56 and gradually rises to 59 by the heel.

It is funny looking but I love the Original Series MACs for the sharpness, thinness, and the HOLE
This is going to be my go to for a chefs knife even though it is offered as a slicer, which I will use it for as well. What is great about it is the large portion of the blade that is very close to perfectly FLAT. Knives with lots of belly that you "rock" as you cut with them are not for me.Even though the blade is very thin it is not too "whippy" for me though it might be for someone else.Seems to cut even a little better than my Tojiro nakiri and edge retention seems comparable. Blows away the Forchner/Victotinox knives we own.One star off for the handle which slightly too small all the way around for the tang of the knife.

my fault I need to replace
I have used this knife every day for over 40 years and I love it. I have been careless and just put it in the sink more times than I can count and have nicked the blade in several places. As this blade will no longer hold a sharp edge I guess it is time for a new one. Will try and be more careful with this one , but at my age the knife will outlast me.
