**Q: Want to smoke some goat meat in a smoke house would this keep it from going bad while being smoked?**
A: If it’s regular cooking temps then you’re fine; but if you are doing low and slow for many hours; smoking is NOT a sufficient preservation technique on it’s own. The meat spends a significant time in the danger zone (40-140F) and bacteria can proliferate exponentially without sodium nitrite (curing)

A: It's not on the package, so I would guess it's not if it's not.

A: It can, but it wouldnt be my first choice. Jerky is typically dried, after being marinated. if dried properly, you will not need the curing salt.
