A: Amchur is unripe green mango, sun-dried and milled to a fine powder. That is the only ingredient - no salt, no sugar, no fillers, no anti-caking agents. It brings a clean, fruity sourness to dishes where you do not want extra liquid.

**Q: How is it different from lemon juice or tamarind?**
