The bag is vacuum sealed and compressed into a hard brick, but once opened, it's your regular granular yeast. The yeast performed beautifully, producing a wonderful loaf of bread. I make my bread in the bread maker with 2.5 cups of wheat flour, 3/4 cup of rye flour, and 2 teaspoons of dry instant yeast. Review: This bag is massive and will probably outlive me at this point. I only use about half a teaspoon for a few decent sized baguettes so it barely makes a dent. Works beautifully though and gives great rise every time. Just remember to get it to room temp. I keep mine stored in a Pyrex in the fridge and it stays fresh. For the price it is honestly a steal considering how long it lasts.
