**Q: Why does this have to be stored in the fridge?  Coffee websites say you should never store coffee in a fridge or freezer?**
A: Oxygen damages coffee. When you buy coffee (freshly ground coffee, not instant), you may have noticed that it comes vacuum sealed. This is because oxygen can damage the quality of your coffee. In order to give your coffee the best chance of preservation, you should aim to reduce the flow of oxygen to your stored coffee as much as possible. This often means keeping your coffee sealed in its original packaging or moving your coffee into an alternative air-tight container. 

Sunlight/Artificial light damages coffee. Whether the light is coming from a natural source or an artificial source, it will start to break down the molecules within the coffee, impacting its flavour and shelf life. For this reason, coffee should be stored in opaque containers, in an area of your kitchen that is dark. 

High Temperatures damage coffee. I can hear you through the screen. But isn’t heating coffee the whole point? Yes, but not before the brewing process. By exposing your coffee to high temperatures, it accelerates the process of oxidation that can break down the flavour. For this reason, coffee should be stored away from hot areas of the kitchen, such as the oven and hob. 

Moisture/Humidity damages coffee. Humid environments, as well as sudden temperature fluctuations, can result in increased moisture levels. Moisture is the enemy of coffee. Scott McMartin, a member of the Starbucks Green Coffee Quality group, explains "The cell structure changes, which causes a loss of the oils that give coffee its aroma and flavor”. This change in cell structure results in a bitter-tasting coffee. 

I personally use an air tight container or a resealable bag.

A: I always assumed it’s the 1-5 scale. These beans are strength 4, I doubt it’s light roast. Nice creamy coffee though.

### ⭐⭐⭐⭐⭐ What espresso should be........

Looking for a very good espresso/latte coffee at a really good price? Try this one. Cutting open the bag the aroma was very promising.......coffee as coffee should smell. I set my Iberital grinder to the finest setting and these beans ground perfectly. I like my espresso strong and long so 20grms in and 60ml out. The very first extraction was IMO perfection...just how I like my espresso. The pull was IMO perfect...no channeling, no spitting just a lovely swirl to a central crema flow. Taste was, again IMO, how espresso should be...strong, not acidic or sour with a lasting flavour of coffee(what else?) chocolate and that certain something that defies description but you know comes from a good espresso. I have bought from Rave, Pact, Spiller & Tait and others....all are lovely espresso/latte coffees but at a much higher price point and it is that which helps this coffee (CREMA COFFEE BEANS) top my list of beans to keep in store. Will I buy again? Most certainly. These will be my every day go to beans. Will I buy others? Sure ...we all need variety but others will be purchased only a few times a year now I have found these. IMO...At this price and with this resultant espresso these beans can not be beaten.
