The brewery is located in Akashi City, Hyogo Prefecture- which is known as the birthplace of Sake making. Hyogo has fertile land ideal for growing rice, abundant, pure water, and the perfect climate for Sake production. We only make premium Sake, with the finest, locally sourced ingredients. This particular Sake is made only with Yamada Nishiki rice- which is known as the king of the Sake rice. Daiginjo shows that the rice has been polished until it is a maximum of 50% of its original size- which leads to a purer, elegant style os Sake with floral and fruity notes.
