**Q: It looks as though the safety holder may prevent the ability to slice the entire piece of food.  Is there left over food that has to be knife sliced?**
A: Generally the amount remaining is just over/under a slice as the holder has a presser that pushes the food being sliced to the bottom and even with the base of the holder.

**Q: I want to slice fruits and veggies for dehydration. Is this good for that?**
A: As a matter of fact, my wife makes pear chips with ours.  They aren't fully dehydrated but rather simply extremely baked.  However,  she slices them in the same manner and thickness that she would if they were dehydrated.

**Q: can this be used on cabbage for cole slaw?**
A: Yes. There is a separate blade that be changed and used to shredcabbage, sprouts, onions, even zucchini. Quite easy to change onceyou've done it a few times."

Deserves 1?0 starsThe instruction manual deserves 1 star. Preferably 0 stats.I bought the .4 blade slicer. The pictures are not of that model.Looking for the same square hole in your slicer’s frame? Doesn’t exist.Very frustrating to figure out how to reassemble the (d*mn’) thing after it falls in the floor.Or how to put it back tigether after washing because tgere is a super sharp blade involved!One part is said by the manual to slide in vertically. But it only fits if slid in horizontally. You get the picture .I am a little nervous about attempting to change blades until I have mastered assembling it. Disassembly, however, is a piece of cake!This is the best mandolin slicer I’ve ever had. And I’m coming to realise that it is absolutely the best one for the job when it comes to slicing food to be dehydrated.The sharpness of a mandolin slicers blades is pretty critical. These are as sharp as they get!The slicer comes fully assembled in its box.The instruction booklet wasn’t so great. It was pretty disappointed with it when I had to figure out how to put the parts back together when deci her fell on the floor unexpectedly and its removable parts flew off.If I have good pictures, I can put things together in a snap. These graphics are printed clearly, but they are not instructive enough when the text is so brief.However, if when sits down, it looks at things for a while you “get it.”•••Warning•••Yeah, the instructions say that the blades are very sharp. They say not to touch them. OK. I worked with sharp leather knives for years, Jerry rarely ever cutting myself. I never badly.As the instruction booklet does not tell you how to clean the blade other than that it’s dishwasher safe, and I did not intend to put it in dishwasher, I was very carefully running a dish cloth with soapy water over it. Bad idea!I will not touch that blade again. I’ve got a very large bandage on the end of my finger and the finger is very insulted. Loads of blood.I put red pepper on it which stings. Either red or black pepper is a pretty good coagulant.The moral of the story is that I discovered from the instructions how to remove the blade in its plastic frame.The essential thing to know is how to remove the frame with its blade, and to only touch the plastic framework.And once you know to do that, you’ll never get cut! Well, and using a Kevlar glove is pretty important too. Yeah, I know, for most people it’s another expenditure. But I am now using the Kevlar glove on my right hand when I’m slicing things. And it WILL prevent spilled blood, even for the most careful folks.A slicer should be very sharp and it should last a long time, in my humble opinion.I think this will live up to both of those expectations. However, in order to do so, one needs to develop new hands to keep one’s fingers from getting cut on the blade.

Bought this mandoline because I like the OXO Good Grips 3-Blade Tabletop Spiralizer with StrongHold Suction so much. In comparing the tools I can see that OXO design has evolved since this mandoline was introduced in 2008 (search for "chowhound oxo mandoline video"). I do realize OXO has released a few new mandolines since then, but I wanted one with a v-blade, julienne cutters, a ripple cut, and a food pusher that is not spring-loaded, so I purchased this older one.I like that the Spiralizer has a separate box with drain holes in the bottom to store the blades; there is less opportunity to cut myself while the blades are drip-drying inside the box on my drying rack and it keeps them clean and safe when not in use. Other reviewers have complained that mandoline juice gets onto the blades stored onboard underneath this mandoline. So to simplify storage and cleanup I made myself a box for the blades (see attached photos).Like other reviewers I've discovered that carrots stain the runway; after grating only two carrots and washing immediately afterwards with Dr. Bronner's Pure-Castile Liquid Soap (8 oz, Peppermint), there was a permanent orange stain. This surprised me as Dr. Bronner's soap usually removes almost everything, and I washed the mandoline immediately. I don't really mind how it looks since it doesn't affect function, but if that were important to me, I could imagine being upset.I've cut oranges (thick) and onions (thin) so far. The food pusher worked just fine. The blade cut just fine. I've successfully minced onions using the "rotate 90 degrees on each cut" method, using the large (orange) julienne cutter in combination with the blue (3mm) setting on the v-blade. I've sliced mushrooms (those work best stem-side down toward the blade to get cut first). I've sliced ginger and garlic pretty cleanly on the 1.5mm setting. The food pusher does have some problems grabbing individual garlic cloves when they're mostly cut and only a little is left. I've tried julienning garlic into matchsticks with inconsistent results. I've tried waffle-cutting garlic cloves with inconsistent results. I haven't tried waffle-cutting anything else; I'm waiting for the chain mail glove to arrive so I can try it on carrots (I'd like to be able to make waffle-cut carrot "chips" for dips and not buy the yucky pre-cut ones in the store).A word about the cut-resistant gloves:I bought a cut-resistant pair of gloves NoCry Cut Resistant Gloves - High Performance Level 5 Protection, Food Grade. Size Small, Free Ebook Included! so that I could cut things that don't fit inside the food pusher. Unfortunately the tip of the glove caught in the blade as I was slicing the first onion, so in the end I returned them and bought the chain mail glove instead.I think I'm going to invest in a pair of these gloves, instead Anself Stainless Steel Mesh Knife Cut Resistant Protective Glove High Perfomance for Kitchen Butcher Working Safety
