A: I have mine in the coldest spot in the refrigerator (except the freezer) and it appears to be in good shape after 3 months.

**Q: Is this a soft cheese?**
A: Yes,  it's  soft, with a texture much like  feta but not a s salty and so much more flavorful and creamy.  I love it.   It's my favorite cheese.  There is  so much you can do with it. Use it with salads, pasta. sandwiches or just for a snack.

**Q: It is made from  sheep or goat milk ? info says " either" so which one ; both perhaps ?**
A: I think it's  sheep's  milk. Goat  cheese has a  much stronger flavor. This cheese is mild   but full of flavor.
