Pectinase OM, 100ml OM pectinase is an enzyme preparation for liquefaction of seed and kernel fruit must in small distilleries. This preparation is composed in addition to pectinase, very important cellulolytic enzyme activities for softening of trognon, skin and hard fruit flesh. The dosage depends on the species of fruit. The quantities indicated in this way must be diluted in a warm quantity 10 times greater before being mixed with must. Apple (8ml), Quince (11ml), Pear (6ml), Plum (3ml), Peach (5ml), Sorb (15ml)
