Ideal for small batches of Summer Sausage, Sopressata, Salami, Bologna, Knockwurst or other larger than average sausage. Casing lengths will vary. Casings are not easily digestible and not recommended for eating, and should be peeled after product is made ready to eat. Packed cleaned, flushed, and salted to preserve freshness. Makes about 30 lbs. or Sausage. DO NOT Freeze Natural Casings. Keep Refrigerated. Casings will give off odor if warmed; however, this does not mean the product is spoiled, simply return to refrigeration to reduce/remove smell. Easy Summer Sausage Recipe on Label. Make sure you know how much you will need before you start soaking the casings. You may not need to use everything. Cons: * The casings are going to smell pretty strong. The smell will stick to your hands and linger in the room for a while. You need to make sure that the casings are not legitimately rotting although, it's probably not going to be likely that you'll get rotting casings. Verdict: The customer service alone should absolutely compel you to only buy from The Sausage Maker if you're buying casings on desertcart. Follow the guides that other people have put out online and soak the casings ahead of time. Make sure you know how much casing you'll need to use or you'll may be left with a lot of unused casings that you'll need to try to figure out how to properly store for future use. If you soak for too long, the casings become bloated with water and it will interfere with the drying process. Make sure you know that the type of animal will have a different sized casing as well as determine how thick the casing will be. If you don't know if you should be using the beef casing then you should be going with the pork casing.

**Q: Can these be used for haggis?**
A: No, you would not want to use this for haggis.  That is what I bought it for, and it is much too small in diameter.

**Q: can these be boiled? what size sausage filling tube works with this?**
A: Yes, they can be boiled. I use my largest tube,  40mm. I would say you could use up to a 50mm, but as i don't like issues when I'm trying to stay in the zone,  I'll stick with my 40.

**Q: I received mine, the package was leaking and smelled like rotted meat, is that normal?**
A: I would think not.  Contact the company.

**Q: What's the mm?**
A: Millimeters.  The diameter of the casing when it’s full.
55-60 mm when stuffed is about 2.5 inches
