What I understood was that the stone, as it is ceramic is measured in microns. This stone I saw advertised as 3 micron which converts to 8,000 grit. I love mine. I still use a leather strop for the final honing which is probably overkill based on how fine the spider stone is. **Q: Will this stone work on my Japanese knives at 62 rockwell?** A: I use this for my straight razor **Q: So, I see some say it isn't perfectly flat and they use different methods coarse DMT, etc. to flatten it, so won't that "rough" it up too much?** A: I had the same concern as you so did not use a dmt diamond to grind the ceramic flat. The many tiny hills and valleys on the ceramic surface are very apparent after sharpening a knife because the tops of the hills get dirty but the valleys do not. But even without being perfectly flat the ceramic works well. Foto comparative tra le due. La pietra richiede pochissima manutenzione, quasi non si "conca" e per pulirla basta una vigorosa spugnettata abrasiva con un pulitore in polvere "VIM". La grana è realmente ultrafine, queste pietre sono spesso più fini di altre marchiate 8000.
